BALSAMIC GLAZED SLICED TOMATOES

This is the best summer tomato recipe we have ever found. Passed down by Kristin’s mom, Linda, slightly baking the fresh sliced tomatoes brings out their natural sweetness which is balanced by balsamic vinegar and tangy parmesan.

Ingredients:

Garden fresh tomatoes

Olive Leaf Traditional Balsamic Vinegar

Spinach - bag full

Garlic - chopped

Parmesan cheese - shredded

Method:

Marinate sliced tomatoes for 2-3 hours in Traditional Balsamic - just enough to cover

Bake at 350 degrees for 7 minutes, or until slightly tender

Meanwhile, saute spinach in EVOO until wilted, turn off heat, add garlic and a dash of salt

Put sauted spinach on top of hot tomatoes, sprinkle with cheese. Broil until cheese is golden.
